Does anyone know if green peppers can be frozen without the peppers getting mushy?

I would like to stock up on green peppers this summer while the price is low due to the abundance. But I’m cheap; don’t want to spend money on something I might have to throw away because freezing didn’t work.

It is virtually impossible to freeze them and have them come out crispy when thawed. This is do to the fact that when they are frozen, the ice crystals that form break the cell tissue walls of the peppers. The closest you can get is to have a form of flash freezing(instant)them. This probably can only be done industrially.

Yep, the polish chef is right. Don’t even refrigerate them. It will decrease their taste (also tomatoes).
